Preheat the oven to 350°F. Place cupcake liners in a standard, 12-muffin pan. Set aside.
Add the wet ingredients to a large bowl: pumpkin, coconut oil, maple syrup, sugar, flax egg, and vanilla. Whisk until well incorporated
