Line the pie shell with parchment and fill the pie shell completely with dry beans or pie weights! Usually I make a large fish pie and plonk it in the middle of the table.   5. Chop up sweet potato, skin on, peel white potato and chop both and boil. When tender, drain. Place in a pan with a tea towel on top and allow to dry out.
  6. On a very low heat return potatoes, add plenty of butter, a good glut of milk and lots of Parmesan and white pepper and mash mash mash.
  7. Top the mash onto the fish in a very rustic way. Once on top grate more Parmesan on top and pop in the oven for about 40 mins at 180.
  8. Serve with salted buttered green beans and enjoy 😉
