The ingredients needed to make Feta and Pepper Couscous:
  1. Get cooking oil
  2. Get 1 large onion, chopped
  3. Prepare 2 tsp curry powder
  4. Get 2 peppers (any colour), chopped

  6. Prepare 200 ml boiling water
  7. Get 200 ml couscous
  8. Prepare 150 g feta cheese, chopped
Steps to make Feta and Pepper Couscous:
  1. Heat the oil in a large pan, add the onion and fry gently for a few minutes. Stir in the curry powder, then add the peppers. Cover the pan and leave it on a gentle heat for 5 to 10 minutes, stirring occasionally. Add the mushrooms, cover again and leave to simmer until all the vegetables are softened.
  2. Pour the water in the pan and stir. Mix in the couscous. Cover and leave for a few minutes for the couscous to absorb the water. (You may need to add a little more water.) Stir in the feta cheese and serve immediately.
