  1. Cut tortillas into triangles, rub in olive oil and sprinkle with half the paprika, season with salt/pepper cook in hot oven 200 degrees for 5:7 mins.
  2. Fry off mince with soy,chilli flakes cumin and the rest of the paprika.. once browned add the drained kidney beans and tomato paste. Add hot water 200ml and fry for 5 minutes.
  3. Dice the tomatoes, spring onions and coriander together… this is your salsa! Mix with olive oil/ salt/ pepper.
  4. Bring everything together.. add cheese if you prefer! Loaded healthier nachos which my boy loves helping to cook and eat of course 😍Enjoy!
