Jackfruit Seed Stir Fry: This is one of my favorite dish. :) My mom makes it during summer when we get fresh ripe jackfruit. So lets make this yummy snack.! Put on low flame and add sambar powder, turmeric powder, chilly powder, salt and stir. Now add the cooked jackfruit seeds and mix everything.

Instructions to make Khed (Stir-Fried Jackfruit seeds):
  1. Remove the brown skin of jackfruit seeds & chop in medium size pieces.
  2. Heat 1 tbsp oil in a pan. Add 1 tsp mustard seeds & let them crackle. Add 1/2 tsp asafoetida, chopped jackfruit seeds, 1/2 cup water and mix. Cover & let the water reduce completely.
  3. Open the cover & add 1 tsp sugar, salt as per taste, 1 small kokum, 1 cup chopped onion, 1 tbsp chopped coriander leaves, 2 tbsp freshly grated coconut, 1 tsp red chilli powder and saute well. Remove from flame & serve hot with roti/chapati.
