  1. Preheat the oven to Gas Mark 5,wash beef joint under the cold water tap,add too roasting tin,or Skillet - with Cooking Oil in - I used Sunflower Oil and roast with Kitchen Foil over the top,roast for One hour.
  2. Remove foil,then roast at Gas Mark 9 for 20 minutes.I basted the beef joint after 10 minutes of that 20 minutes.
  3. Allow to rest for at least 15 minutes,ideally rest for 30 minutes,can leave overnight in the Fridge,but Fridge needs to be at the right temperature so that it does not freeze over.Wrap in cling film when cold and then wrap Kitchen Foil over the top.Add too hot sauces at the last minute,or make lovely cold sandwiches with it.
