The ingredients needed to make Pot Roast:
  1. Make ready 1 beef roasting joint (less than 1kg)
  2. Make ready Marinade
  3. Take 1-2 tbsp each: BBQ sauce, ketchup, brown sugar & Worcestershire sauce
  4. Make ready 1 tsp each: Dijon mustard & hot sauce
  5. Make ready 1/2 tsp each: smoked paprika, hot paprika & cumin
  6. Take Salt and pepper to taste
  7. Take 1/4 cup veg stock
  8. Make ready 2 bay leaves and a sprig of rosemary and thyme
  9. Make ready 3 garlic cloves
  10. Prepare sticks Veg: potato, cubed; onion, sliced & carrot
Instructions to make Pot Roast:
  1. Prepare and mix marinade ingredients. Taste and adjust seasonings to your liking.
  2. Add beef to marinade, cover all parts then sear on both sides in slow cooker.
  3. Add veg to remaining marinade in same bowl, mix then add to slow cooker. Add remaining ingredients and allow to cook on high for 2 hours, flip it then cook on low for 2-4 more hours.
